Ok, so I used to make a variation of this dish before I had a blog. But tonight, I had a cooking fail that ended up with me making a tasty stir fried rice dinner. (Just believe me when I say don’t freeze leftover gumbo and try to resuscitate it. Seriously, just believe me.)
Anywho, here’s what I did to save dinner after the gumbo fail. This is the perfect way to use leftover rice and is probably one of the most unprecise recipes ever, but you could put almost anything you want in it and it’ll still taste good. I hope you can follow along.
Stir Fried Rice
Ingredients
1-2 cups of cooked rice (I probably used about 1.5 cups of white rice)
1 cup of chopped frozen broccoli (fresh would be ok too)
1 small can of mushrooms, drained (I would have used 8oz fresh if I had them)
1/4 cup diced carrots (I used about 8-10 baby carrots)
1-2 garlic cloves sliced or finely chopped depending on your preference
fresh snow peas (20 more, depending on how much you like snow peas)
soy sauce (I used the low sodium kind)
1 tbsp butter
1 egg
Directions
1. Melt 1/2 tbsp butter in a large nonstick pan over medium high heat.
2. Add carrots, frozen broccoli, and garlic. Cook, stirring frequently for about 2 minutes.
3. Add remaining 1/2 tbsp butter and mushrooms. Cook for another 2-3 minutes stirring frequently, until the mushrooms begin to brown.
4. Add cooked rice and a generous pour of soy sauce (3 or 4 tbsp). Cook for 2-3 more minutes. Stir periodically, allowing the rice to begin browning.
5. Add beaten egg to the pan and stir to cook quickly.
6. Add some more soy sauce (depending on your taste) and snow peas. Cook for 2-3 more minutes then serve.
And like I said, it’s a recipe that is very easy to change and honestly, it’s pretty difficult to mess up (just don’t burn it). You can add meat or extra vegetables or use brown rice.
Next time I might add 1/2 medium onion, diced (in the first step) and maybe one more egg. I probably would also use fresh mushrooms, but I’d start them first (with an extra 1/2 tbsp of butter) to get them started cooking down.
So, next time you find yourself with some extra rice and vegis, try a stir fry.
