Just kidding! But I have to admit, when my mom cooks she does it right. Recently, she was awesome enough to include me when she was making multiple pans of lasagna and I thought I’d share with you.
If she had a “signature dish” this might be it. Oddly enough, she only cooks it for other people. She doesn’t even like eating it. Mom was awesome enough to package it in portions with her foodsaver for me!!! Woohoo…prepackaged lunch and dinner!!! The best way to cook the frozen packages is to put them in boiling water for about 45 minutes.
Here’s the recipe.
Lasagna
1 ¼ lbs. (approx.) ground beef
1 clove garlic, minced or pressed
1-32 oz. Jar prepared spaghetti sauce
1 ¼ tsp. Italian style herbs
¼ cup water
Uncooked lasagna noodles
16 oz. Small curd cottage cheese
2 eggs
1 cup Parmesan cheese
2-3 cups mozzarella cheese (more cheese is better)
1.) In skillet, brown ground beef with garlic until done, and crumbled.
2.) Drain excess grease.
3.) Stir in spaghetti sauce, herbs and water.
4.) Spoon 1/3 sauce over bottom of 9×13 baking dish.
5.) Top with a single layer of noodles. (cover sauce completely)
6.) Mix the cottage cheese, eggs and ½ parmesan cheese.
7.) Spoon half of this mixture over the noodles
8.) Top with another 1/3 of the sauce.
9.) Top with ½ of the mozzarella cheese.
10.) Repeat Layers of noodles, cottage cheese mixture, sauce and parmesan and mozzarella cheese. (Be sure noodles are covered completely with sauce and toppings.)
11.) Bake at 350 degrees for 50-60 minutes until cheese bubbles, is lightly browned and noodles are done.
The coolest part is that you don’t have to cook the noodles in advance. And seriously, more cheese is better.
